    Spicy Chicken Rice Soup

    Serves: 6

    4 c. low-sodium chicken broth
    2 c. cubed cooked chicken
    2 celery ribs, chopped
    2 medium carrots, chopped
    1 medium green pepper, chopped
    1 medium onion, chopped
    1/3 c. uncooked long grain rice
    1/4 c. minced fresh cilantro or parsley
    1/2 tsp. dried oregano
    1/2 tsp. pepper
    1/4 tsp. ground cumin
    1/8 to 1/4 crushed red pepper flakes

    In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice and vegetables are tender.

    One serving equals: 135 calories…100 mg sodium…31 mg cholesterol…17 gm carbohydrate…11 gm protein…3 gm fat…2 gm fiber ++++ Exchanges: 1-1/2 very lean meat…1 starch +++ WWP: 3
