    Butternut Squash Apple Bake -- e-w

    Butternut Squash Apple Bake -- e-w
    Serves: 8

    1 butternut squash (2 lbs.) peeled and cut into 1/2-in. slices
    3 medium tart apples, peeled, cored and thinly sliced into rings
    1/3 c. packed brown sugar
    1-1/2 tsp. flour
    1/4 tsp. cinnamon
    2 T. stick butter-flavored margarine, melted

    Arrange squash in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Top with apple rings. Combine brown sugar, flour and cinnamon; sprinkle over apples. Drizzle with butter.

    Cover and bake at 350º for 40-50 minutes or until squash and apples are tender.

    1 serving equals: 120 calories…3 gm fat (Trace gm saturated)…Trace cholesterol…36 mg sodium…25 gm carbohydrate…4 gm fiber…1 gm protein +++EXC: 1 starch…1/2 fruit…1/2 fat +++WWP: 2
