    My Mamaw's Rolls

    Recipe Introduction

    These are the best rolls in the world! My grandmother brought the recipe with her from her homeland, Latvia.

    List of Ingredients

    2 Cups Warm milk (I heat milk and butter together in a saucepan)
    1 stick butter
    1 to 2 teaspoons salt (I use 2)
    1 tablespoon sugar
    1 to 2 packages of yeast (I use 2)
    6 to 8 cups bread flour
    1 egg
    2 teaspoons water
    butter caraway seeds

    Recipe

    melt butter in warm milk. (Be sure the milk is not too hot). Add salt and sugar to butter and milk. In a separate bowl, dissolve yeast in about 1/4 cup warm (not hot) water. Add 2 cups of flour to the milk and butter mixture, making a very thin batter. Add yeast to batter mixture. Add flour in small amounts until the dough is stiff enough. Usually it takes 6 to 6 1/2 cups flour. Grease bowl with butter, add dough, then smear the top of dough with more butter. Cover and sit in a warm, draft free place and let double in size. Punch down. Cut or pull off about 1/3 cup of dough and roll into a roll, place on lightly greased cookie sheet. Brush with egg wash (1 egg and 2 tsp water beaten well). Make indentation in center of roll and add caraway seeds and a dot of butter. Bake at 350° until golden brown.
