    PINEAPPLE-WALNUT CAKE

    List of Ingredients




    1 can (20 oz.) crushed pineapple and juice
    2 c. flour
    2 eggs
    2 tsp. baking soda
    2 c. sugar
    1 tsp. vanilla
    1 c. walnuts or pecans, finely chopped

    FROSTING INGREDIENTS:

    3 oz. pkg. cream cheese
    1/4 c. margarine, softened
    1 tsp. vanilla
    2 c. powdered sugar

    Recipe



    Lightly beat the eggs. Add the rest of the cake ingredients and mix by hand.

    Pour into a greased 9x13 pan.

    Bake at 350 degrees for 35 to 40 minutes.

    Cool before frosting.


    FROSTING:

    Blend the cream cheese and margarine. Gradually add the powdered sugar. Add the vanilla.

    Beat until light and creamy.

    Spread frosting on cake and sprinkle with finely chopped nuts.



    This is a nice moist cake.
