Rabbit's Carrot Cake

- 2 cups all-purpose flour
- 2 tsp baking soda
- 3/4 Tbsp salt
- 1 Tbsp cinnamon
- 2 cups granulated sugar
- 4 eggs
- 1-1/2 cups vegetable oil
- 1 cup chopped pecans
- 2 cups grated carrots

- 1 lb. cream cheese
- 2 tsp vanilla extract
- 1/2 cup butter (1 stick)
- 1-3/4 cups powdered sugar
Instructions
- Preheat oven to 350 degrees (F). Sift together flour, baking soda, salt and cinnamon. Set aside.
- Cream sugar and eggs together. Add flour mixture and oil, alternately. Fold in pecans and carrots. Pour batter into 2 thoroughly greased 8-inch round cake pans. Bake for 40 minutes.
- Cool cakes in cake pans for 15 minutes. Carefully remove and cool on wire rack before frosting.
- For the frosting: Mix the cream cheese, vanilla, butter and powdered sugar. Spread between layers and on top of cake.
