    Rabbit's Carrot Cake

    List of Ingredients


    • -- Cake --
    • 2 cups all-purpose flour
    • 2 tsp baking soda
    • 3/4 Tbsp salt
    • 1 Tbsp cinnamon
    • 2 cups granulated sugar
    • 4 eggs
    • 1-1/2 cups vegetable oil
    • 1 cup chopped pecans
    • 2 cups grated carrots
    • .
    • -- Frosting --
    • 1 lb. cream cheese
    • 2 tsp vanilla extract
    • 1/2 cup butter (1 stick)
    • 1-3/4 cups powdered sugar


    Instructions


    1. Preheat oven to 350 degrees (F). Sift together flour, baking soda, salt and cinnamon. Set aside.

    2. Cream sugar and eggs together. Add flour mixture and oil, alternately. Fold in pecans and carrots. Pour batter into 2 thoroughly greased 8-inch round cake pans. Bake for 40 minutes.

    3. Cool cakes in cake pans for 15 minutes. Carefully remove and cool on wire rack before frosting.

    4. For the frosting: Mix the cream cheese, vanilla, butter and powdered sugar. Spread between layers and on top of cake.

      Serves 12
