- 2 eggs, beaten
- 1 cup corn flakes, crushed slightly
- 1/3 cup all-purpose flour
- 1 boneless and skinless chicken breast (about 6 oz.), cubed
Instructions
- Preheat oven to 400 degrees. Coat a baking pan or cake pan with nonstick cooking spray.
- Place beaten eggs in one bowl and corn flakes in another. Put flour in a plastic or paper bag and add chicken chunks; close the bag and let kids shake to coat chicken with flour.
- Pour chicken chunks into a mesh strainer and shake off excess flour over sink. One by one, dip each flour-coated chicken chunk into the egg, then into the corn flakes, to coat evenly. As they are coated, put chicken chunks into baking pan.
- Bake for 10 to 12 minutes, or until chicken is cooked through. Cool and serve. (Chicken nuggets will keep up to 2 days in refrigerator.)
