    List of Ingredients


    • 1 1/2 cup rolled oats
    • 2 cups buttermilk (we substitute with fat free milk w/3-4 T
    • lemon juice mixed in)
    • 1/2 cup sifted unbleached flour
    • 1 tsp. sugar
    • 1 tsp. baking soda
    • 1 tsp. salt
    • 2 eggs, beaten (we use Eggbeaters)


    Instructions


    1. Mix together dry ingredients. Add buttermilk and eggs,
    2. mix well. Let set for a few minutes.
    3. Cook on griddle or your preference. Turn pancakes as
    4. soon as they are puffed and full of bubbles, but before
    5. they break. This is important for light cakes. Turn
    6. and brown on other side.


    Final Comments


    Makes 12 (4") pancakes. You can add fresh fruit to batter as well, i.e. blueberries, apples, banana, etc.
