Oatmeal Pancakes

List of Ingredients
- 1 1/2 cup rolled oats
- 2 cups buttermilk (we substitute with fat free milk w/3-4 T
- lemon juice mixed in)
- 1/2 cup sifted unbleached flour
- 1 tsp. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 2 eggs, beaten (we use Eggbeaters)
Instructions
- Mix together dry ingredients. Add buttermilk and eggs,
- mix well. Let set for a few minutes.
- Cook on griddle or your preference. Turn pancakes as
- soon as they are puffed and full of bubbles, but before
- they break. This is important for light cakes. Turn
- and brown on other side.
Final Comments
Makes 12 (4") pancakes. You can add fresh fruit to batter as well, i.e. blueberries, apples, banana, etc.
