    No crust needed on this recipe Serves 8


    List of Ingredients


    • 1 9-inch pie plate
    • 1 pound of crisp bacon
    • 2 egg yolks
    • 1 teaspoon Dijon mustard
    • 1/2 teaspoon dry mustard
    • 1/8 teaspoon cayenne pepper
    • 1/2 cup cup grated Parmesan cheese
    • 2 cups heavy cream
    • 1 teaspoon chopped parsley


    Instructions


    1. Break up crisp bacon and sprinkle half of it into bottom of pie plate.
    2. Make following custard: Put into a bowl and mix well 2 whole eggs plus 2 yolks,
      Dijon mustard, dry mustard, cayenne pepper, bacon fat, and 1/8 cup Parmesan cheese

    3. Scald the cream by heating jsut to the boiling poing (do not boil!).
    4. Pour scalded cream into custard mixture.
    5. Bake at 300 degrees for 35 minutes. Remove.
    6. When set, sprinkle with remaining cheese, bacon and the parsley.
    7. Serve warm.

    Great to make ahead and then reheat slice in microwave for breakfast or lunch.
