    Bam- Baked Chicken Breasts

    RMKrul with adaptation using Emeril herbs


    List of Ingredients


    • 2 boned chicken breast ( about 1 1/2 pounds) [ I usually use 4 or 5 boneless halfs]
    • 1/2 teaspoon celery salt *
    • 1/2 teaspoon mixed herbs *
    • 1 cup bouillon
    • 3 Tablespoons dry white wine [ I used the Beringer White Zin ]
    • 1/2 teaspoon minced onion
    • 1/2 teaspoon minced parsley
    • Paprika *
    • Parmesan cheese (optional)
    • * can replace with Emerils BAM herb mix if desired
    • Emerils Bam herb Mix:
    • 5 Tablespoons sweet paprika
    • 1/4 cup salt ( note -my husband usually cuts back on the salt and increases the Paprika)
    • 1/4 cup garlic powder
    • 2 Tablespoons freshly ground black pepper
    • 2 Tablespoons onion powder
    • 2 Tablespoons cayenne
    • 2 Tablespoons dried oregano
    • 2 Tablespoons dried thyme


    Instructions


    1. Preheat oven to 350 degrees.

    2. Remove all skin and visible fat from chicken breasts;cut lengthwise into halfs [ I cheat and buy them this anyway ]

    3. Rub chicken all over with mixture of the celery salt and mixed herbs [* I use a Emeril BAM herb mix, see additional recipe]

    4. Place in baking pan.

    5. Combine bouillon, wine, onion, parsley and generous dash of paprika [paprika is already in my BAM herb recipe]stir well and pour over chicken.

    6. Cover pan with foil and bake 25 minutes.

    7. Remove foil, brush chicken with liquid in pan, and bake uncovered 15 minutes longer or until chicken is tender to the fork



    Final Comments


    I Serve with juice over spinach noodles. [ juice is very yummy!!!] Top with grated Parmesan

    Serves 3 or 4
    I use I use Emerils herb mix as a rub on meats and chicken...Dry rub on Ribs very yummy!
