    Fiesta Chicken Enchiladas

    List of Ingredients


    • 2 cans (10 oz. each) mild enchilada sauce
    • 2 cups chopped cooked chicken
    • 1/2 cup sour cream
    • 1 can (4 oz.) chop green chilies,undrained
    • 1/3 cup chop green onions
    • 1/4 teaspoon salt
    • 2 cups shredded Monterey jack cheese
    • 10 (6 or 7 inch) flour tortillas


    Instructions


    1. Preheat ovent to 350 degrees .

    2. Pour 1 can enchilada sauce in a 9x13 baking disk.

    3. In large bowl, combine chicken, sour cream, chilies,

    4. onions, and salt; stir in 1 cup of the cheese.

    5. Roll up tortillas and place, seamside down, in baking

    6. dish. Pour remaining 1 can enchilada sauce over top;

    7. sprinkle with remaining 1 cup cheese.

    8. Bake, uncovered for 30 minutes or until cheese is

    9. melted and enciladas are heated through.

    10. I sometimes use a little more cheese on top.
