    1/4 cup water (warm)
    1-1/2 tsp salt, dry yeast, sugar
    3 cups flour

    Recipe




    Heat oven to 400º F. (200º C).
    Mix first 4 ingredients and stir.
    Add 3 cups flour and mix well. Knead smooth, for about 10 minutes.
    Place in greased bowl. Let rise 15 minutes. Punch flat and square 1" wide. Roll with heel of palm to form 1/2" diameter strips.
    Wrap each loosely around 3 fingers of hand, pinch off ends of dough.
    Overlap ends 1/4", press together to form ring. Roll to secure and make even. Cover and let rise 20 minutes. Drop bagels, 1 at a time, into 1 gallon boiling water to which 1 tbsp. sugar has been added. Simmer 7 minutes or until they float.
    Remove and cool on towel. Bake on baking sheet 30 - 35 minutes at 400° F. turning once.
    Makes about 6.
