    Chocolate Orange Nut Bread

    1 medium orange
    1 cup chopped dates
    2 Tbs. melted shortening or melted margarine
    1 tsp. vanilla
    1 egg
    2 cups flour
    1/4 tsp salt
    1 tsp baking powder
    1/2 tsp baking soda
    1 cup sugar
    1/4 cup chopped walnuts
    6 ounces of chocolate, chopped into small pieces


    Recipe




    Heat oven to 350° F. Line a 5 x 9-inch loaf pan with baking paper, or use margarine and flour. Set aside. Juice the orange, saving the juice. Then remove the white membrane from the peel, and chop up the orange peel. Add the dates to the chopped orange peel and chop up a bit more to make a good mixture. Add the juice at this point. Stir in the shortening (or margarine), vanilla, and the egg. Add the sugar. Stir in the flour, salt, baking powder and baking soda. Mix well. Add the chocolate chips and the chopped walnuts, stir to incorporate. Bake for 1 hour. Cool 15 minutes, unmold onto rack and cool completely.
