Apple Cake with Buttermilk Sauce

3 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
3 eggs
2 cups sugar
1-1/4 cups vegetable oil
1 tsp. vanilla extract
1/4 cup orange juice
2 cups chopped, unpeeled apples
1 cup each chopped walnuts, flaked coconut
Recipe
Heat oven to 325ºF (165ºC). Combine flour, baking soda, salt and cinnamon; set aside. In a large mixing bowl, beat eggs. Add sugar, oil, vanilla and orange juice. On low speed, blend in flour mixture. Fold in apple, walnuts and coconut. Pour into a greased and floured 10" tube pan. Bake 1-1/4 hours, until cake tests done. Invert cake onto a large plate or platter. Deeply puncture top of warm cake with a skewer or pick. Sauce: In a small saucepan, bring all ingredients to a boil, stirring frequently. Immediately spoon 1-1/4 cups sauce slowly over top of cake, then pour remainder down sides. Cool. Serve topped with whipped cream if desired. Makes 16 servings.
Note: May prefer to use Cortland apples when baking this, but any firm baking apple will work.
