    Banana Pound Cake

    It is equally good for breakfast or dessert

    List of Ingredients

    1 1/2 cups shortening
    2 cups sugar
    4 large eggs
    2 cups mashed ripe banana
    1/4 cup plus 2 tablespoons buttermilk
    1 teaspoon vanilla extract
    3 cups flour
    1 1/4 teaspoons baking soda
    1/4 teaspoon salt
    1/2 cup chopped pecans

    Recipe

    Beat shortening at medium speed with an electric mixer 2 minutes or until creamy. Gradually add sugar, beating 5 to 7 minutes. Add eggs, one at a time, beating just until yellow disappers.

    Combine banana, buttermilk, and vanilla. Combine flour, soda, and salt; Add to shortening mixture alternately with banana mixture, beginning and ending with flour mixture. Mix at low speed after each addition just until blended. Stir in pecans. Spoon batter into a grease and floured 10 inch tube pan.

    Bake at 325 degrees for 1 hour and 30 minutes or until a wooden pick inserted n center comes clean. Cool in pan on a wire rack 15 minutes; remove cake from pan, and cool completely on wire rack.

    Yield: one 10 inch cake
