    EASY APPLESAUCE CAKE

    List of Ingredients

    1 pkg. plain spice cake mix
    1 C sweetened applesauce
    1/2 C buttermilk
    1/3 C butter, at room temperature
    1/3 C solid Crisco
    1 t pure vanilla extract
    1 t finely grated lemon zest
    2 large eggs
    1 C chopped peeled apple
    1/2 C chopped pecans


    Recipe

    Preheat oven 350º. Place rack in the center of the oven.

    Lightly mist a 12 C Bundt pan with vegetable oil spray, then
    dust with flour. Shake out excess flour and set aside.

    Place all ingredients EXCEPT apple and pecans in a large
    mixing bowl. Blend with electric mixer on low speed for 1
    minute. Stop mixer and scrape down the sides with a rubber
    spatula. Beat for 2 minutes on medium speed. Scrape down
    the sides if necessary. Batter should look well blended.

    Fold in apple and pecans. Pour into the prepared pan,
    smoothing it out with the spatula. Place in oven.

    Bake until golden brown and spring back when lightly touched
    with your finger, about 50 to 55 minutes.

    Remove form oven an let cool on a rack for 20 minutes. Run
    a long, sharp knife around the edge of the cake to loosen
    and invert onto the rack so cake cools right side up. Allow
    to cool completely, about 30 minutes more.
