Strawberry Cake & Cream Cheese Frosting

1 cup butter or margarine, softened
2-1/2 cups sugar
4 eggs
1 tbsp. vanilla extract
1/2 tsp. salt
1/4 cup plain yogurt
2 tsp. baking soda
2 cups mashed strawberries
3 cups all-purpose flour
Frosting
1 pkg. (8 oz.) cream cheese, softened
1 tsp. vanilla extract
1/2 cup butter or margarine, softened
1-1/2 cups confectioners' sugar
Recipe
Heat oven to 350º F. (175º C). Cake: Grease a 9x13" baking pan. In a large bowl, cream butter and sugar. Add eggs and beat 1 minute. Stir in vanilla and salt.
In a small bowl, stir yogurt and baking soda. Add with flour to egg mixture. Beat well, then stir in strawberries. Pour batter into prepared pan. Bake 30 minutes, or until top of cake springs back when lightly touched. Cool cake completely before frosting. Cream Cheese Frosting: Mix all ingredients in a medium bowl. Spread on cooled cake.
Makes 12 servings.
