    Tunnel of Fudge Cake

    List of Ingredients

    1-3/4 cups each (3-1/2 sticks) butter or margarine, softened; sugar
    6 eggs
    2-3/4 cups confectioners; sugar, divided
    2-1/4 cups flour
    1 cup cocoa, divided
    2 cups chopped walnuts (see note)
    1-1/2-2 tbso.milk





    Recipe


    Heat oven to 350º F. Grease and flour a 12-cup fluted tube pan. In a large bowl, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add 2 cups confectioners' sugar; blend well. By hand, stir in flour, 3/4 cup cocoa and nuts. Mix until well blended. Spoon batter into prepared pan; spread evenly. Bake 58 - 62 minutes. Cool upright in pan on cooling rack 1 hour, then invert onto serving plate. Cool completely. Glaze: In small bowl, combine remaining 3/4 cup confectioners' sugar, remaining 1/4 cup cocoa and milk. Mix until smooth. Spoon over top of cake, allowing some to run down sides. Store tightly covered.
    Notes: Nuts are essential for success of this recipe. Since this cake has a soft tunnel of fudge, ordinary doneness tests cannot be used. Accurate oven temperature and baking time are critical.
