    8 egg whites, divided use
    1/2 cup unsweetened cocoa powder
    1 cup sugar
    3 tbsp. vegetable oil + extra for pan
    2 tbsp. cold, brewed coffee
    1/4 tsp. vanilla extract
    grated zest of an orange
    1/2 cup whole almonds, toasted, finely ground
    2 tbsp. flour + extra for pan
    2 tbsp. confectioners' sugar
    1 cup fresh berries

    Recipe




    Heat oven to 350ºF (175ºC(. Beat 6 egg whites until stiff. Set aside. In medium bowl, combine cocoa with sugar, oil, remaining 2 egg whites, coffee, vanilla extract and orange zest. Mix ground almonds with flour and add to cocoa mixture. Stir well. Add 1/3 beaten egg whites. Mix with rubber spatula. Fold in remainder of beaten egg whites. Pour into an oiled and floured 8 1/2" spring form pan. Bake 25 minutes. (Be careful not to over bake.) Remove from oven and allow cake to sit 10 minutes before removing from spring form pan. Cool completely. Put doily (or stencil of your choice) on top of cake. Sprinkle with confectioners' sugar, remove dolly carefully, leaving lace design. Serve with fresh berries on the side. Make 6 little desserts
