Chocolate Gooey Butter Cookies

1 pkg. (8 oz.) cream cheese, at room temperature
1 stick butter or margarine, at room temperature
1 egg
1 tsp. vanilla extract
1 box (18 oz.) moist chocolate cake mix
enough confectioners' sugar, for dusting
Recipe
Heat oven to 350ºF (175ºC). In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in egg. Beat in vanilla. Beat in cake mix. Cover and refrigerate 2 hours to firm up so you can roll batter into balls. Roll chilled batter into tbsp. sized balls, then roll in confectioner's sugar. Place on an ungreased cookie sheet, 2" apart. Bake 12 minutes. Cokies will remain soft and "gooey." Cool completely and sprinkle with more confectioners' sugar, if desired. Makes 24 cookies.
