    1 cup whole-wheat pastry flour
    3/4 cup oat flour
    1/4 cup sugar (or sugar substitute equal to 1/4 cup sugar)
    3/4 tsp. each baking soda, baking powder
    2/3 cup peanut butter
    1/4 cup + 2 tbp. butter or margarine
    3/4 cup light brown sugar
    1/4 cup fat-free egg substitute
    2 tbsp. maple syrup
    1 tsp. vanilla extract

    Recipe



    Heat oven to 350ºF (175ºC). Combine flours, sugar (or substitute), baking soda and baking powder in a bowl; stir to mix well. Set aside. Combine peanut butter, butter and brown sugar in a large bowl and beat with an electric mixer until well-mixed. Beat in egg substitute, maple syrup and vanilla. Add flour mixture to peanut butter mixture and beat to mix well. Shape level tsp. dough into balls and arrange 1-1/2" apart on ungreased baking sheets. Flatten each cookie to 1/4" thickness by crisscrossing with fork tines. Dip tines lightly in sugar between each cookie, if desired. Bake 10 - 12 minutes, until bottoms of cookies are golden brown. Remove cookies and let sit 2 minutes. Transfer cookies to wire racks to cool completely. Makes 40 cookies.
