    The Neelys' Butter Cookies

    3-3/4 cups all-purpose flour + more for work surface
    3/4 tsp. salt
    1-3/4 cups (3-1/2 sticks) unsalted butter or margarine, softened
    1-1/4 cups confectioners' sugar
    2 tsp. vanilla extract
    Coarse Pink Decorating Sugar, optional

    Heat oven to 350ºF (175ºC). Sift flour and salt into a large bowl. Put butter into bowl of an electric mixer fitted with paddle attachment, and beat on medium speed until fluffy and light, about 2 minutes. Add sugar and vanilla, and mix until combined. Reduce speed to low, slowly add flour and salt mixture to butter and sugar mixture, mixing on low speed until dough comes together and is smooth. Turn dough out onto a sheet of plastic wrap. Cut dough into quarters, wrap each piece in plastic wrap; chill in refrigerator 2 hours. Line 2 (9x13") sheet pans with parchment paper. Remove dough from refrigerator and let it soften slightly. Using a rolling pin dusted with flour, roll out 1 dough quarters, keeping others refrigerated until you need them, on a lightly-floured work surface, to a 1/4 - 1/8" thickness. Cut cookies into desired shapes, then use a metal spatula to transfer cookies to 1 prepared baking sheet, spacing about 1-1/2" apart. Sprinkle cookies with decorating sugar, if desired. Repeat with remaining dough, and bake cookies until light brown around edges and on bottom, 8 - 12 minutes. Cool briefly on pan, then use a metal spatula to transfer cookies to a wire rack to cool completely. Makes 24 cookies.
    Notes: You can cut these cookies into any shapes you choose, but in our house we cut them into shape of a pig (pig cutters can be found online or in specialty baking stores).
