    CROCKPOT BEEF STEW With Dumplings

    List of Ingredients

    2-lbs. beef stew meat (I use sirloin, cut into cubes)
    2-lbs. russet potatoes, peeled and cut into chunks
    1-lb. carrots, peeled and cut into chunks
    1 large or 2 med. onions, peeled and cut into chunks
    4 large celery ribs, cut into 1-inch chunks
    8 to 12 ounces of fresh button mushrooms, cut into chunks
    1 can tomato soup, undiluted
    1 can cream of celery soup, undiluted
    Salt and pepper to taste

    Recipe

    Layer beef, uncooked, into bottom of crockpot. Layer all other ingredients, in order, on top of the beef. In a separate bowl, mix the two cans of soup together until completely blended. Pour over the top of crockpot mixture. DO NOT STIR! Cover and cook on low for 8 to 10 hours, (not recommended for cooking on high!). Stir well before serving.

    My family also like this served with dumplings.

    For Dumplings:
    Follow the recipe for Dumplings on the side of a Bisquick box. For the crockpot, drop by spoonfuls onto top of stew mixture; leave uncovered on high for about 20 minutes. Cover and cook on high for about 20 minutes longer, or until cooked through.
