    Crawfish Pies

    List of Ingredients

    1 lb. Crawfish tails, fresh or frozen
    1 1/2 Sticks Butter
    1 bunch green onions chopped
    1/3 cup parsley
    3 Tablespoon flour
    1 pint half & half
    3 Tablespoon Sherry
    2 frozen pie shells or 16 individual shells


    Recipe



    Saute tails in 1/2 stick of Butter in one skillet.
    Drain off the fat. In another skillet saute onion & parsley
    in remaining butter. Blend in the flour and gradually add the
    half & half, stirring constantly to make a thick sauce. Add the
    sherry and the crawfish tails to the second skillet. Season with
    Tony Chachere's. Pour Mixture into shells and bake at
    350 degrees for 20 minutes.
