fish fillets

Italian bread crumbs (substitute is flour)

Recipe
Use olive oil for frying, beginning with about a quarter of an inch
of oil in the pan. Heat to cooking temperature before placing fillets
in the pan. Dip the fillets in beaten eggs. I usually begin with two
eggs. Next, roll the fillets in Italian bread crumbs (plain flour is
ok). Stack on side of dish until ready to fry a batch. After the
fillets have been turned once, take a spoon and dip into a container
of grated romano cheese (I prefer what is called Pecorino romano
cheese) and shake a small amount of cheese on each fillet. Then, turn
and complete the cooking phase. Place the fried pieces of fish on a
paper towel and allow to cool. This recipe is also good on chicken
breast and strips of venison steak. However, "pounding" of the meat
before dipping it into the egg and bread crumbs is recommended.
