    Chili Meat Ball Stew Cornmeal dumplings

    List of Ingredients


    • 1 lb. lean ground meat
    • 1/2 Cup chopped onions
    • 1/4 cup chopped green peppers
    • 1/4 cup dry bread crumbs
    • 1/4 cup milk
    • 1 egg
    • 4 T. beef - flavor Instant Bouillion
    • 11/2 teaspoon Chili powder
    • Veg. oil opt.
    • 2 T. flour
    • 3 cups water
    • 1 16 oz. can stewed tomatoes- undrained
    • 1 15 1/2 oz. can of kidney Beans- Joan of Arc is best kind.
    • Corn meal dumplings
    • Chopped parsley
    • Corn Meal Dumplings.
    • 1 1/2 cup Biscuit baking mix
    • 1/2 cup yellow corn meal
    • 3/4 Cup milk.


    Instructions


    1. In med bowl combine meat, 1/2 t. Chili powder, 1/4 c. onion, milk, egg, green pepper, crumbs, 1 T. Bouillion mix well and shape into 16 meatballs.

    2. brown meat balls, remove. Cook the remaining onions until tender. Add flour, cook and stir until golden. Add Water, tomatoes, meatballs, remaining bouillion and chili powder. Bring to boil

    3. Cover and simmer 30 minutes. Meanwhile make dumplings.

    4. Stir beans into chili mixture. Add dumplings by spoonfuls onto boiling stew. Cook uncover 10 minutes cover.. Cook 10 more minutes.

    5. Cornmeal dumplings... Stir together, biscuit baking mix and cornmeal and the milk. I stir and drop by Tablespoon.
