Rosemary Citrus Marinade

1/4 cup each extra virgin olive oil, lime juice, lemon juice
1 tbsp. orange zest
1 clove garlic, chopped
1 tbsp. rosemary
1/2 tsp. each salt, fresh ground black pepper
Recipe
In a saucepan, on medium high heat, combine olive oil, lime juice, lemon juice, orange zest, finely chopped garlic, rosemary, salt and pepper. Bring to a boil; reduce heat and simmer 2 minutes, then let cool. Pour over 1/2 marinade over desired meat, cover, and refrigerate 2 hours or longer, depending on what you are marinating. To use remaining marinade as a sauce, boil 5 minutes, if appropriate cook with meat (like sautèing chicken or baking fish in marinade. Makes enough for 6 servings.
