    Bill's favorite..New Joe's Special

    Receieved this from my cousin Bill in Washington.This is favorite of his. It was served to him by Mrs. Ann Mehring, ( the late widow of the first helicopter traffic cop. Art Mehring) used to fix him when he lived with the family in Cincinnati.


    List of Ingredients


    • 1 T. olive oil
    • 2 to 3 coloves garlic, chopped
    • 1 lb. ground beef
    • 1 pkg. frozen spinach
    • 4 eggs


    Instructions


    1. In frying pan, brown garlic in oil.Add beef and brown over medium high heat. Breaking beef into small bits.
    2. Push beef to sides of pan and put frozen block of spinach into the space in center of pan.
    3. Cover and steam for 3 minutes. Turn over spinach and steam for 3 more minutes. Keep turning beef as spinach is cooking.
    4. In a bowl, beat eggs with a fork until well mixed.
    5. When spinach is done, Mix with beef. Add eggs salt and pepper to taste. Let eggs set soft before stirring mixture. Stir and turn, then serve at once.


    Final Comments


    Great with sliced tomatoes and french bread or garlic bread- even better.
