2 cups all-purpose flour
1/2 cup sugar
2 tsp. baking powder
1/3 tsp. sea salt
1/4 cup chopped,toasted pecans
1 large egg
2 tbsp. orange juice concentrate
2 tsp. grated orange zest
3/4 cup milk
3 tbsp. butter or margarine, melted
Recipe
Heat oven to 400ºF (200º) Combine sugar, baking powder and sugar in a large bowl Add pecans. Make a well in center. Add next 5 items (egg thru butter); Stir with whisk until iquid ingredients have been completely combined. Add to flour mixture, stirring just until moist. Spoon batter into 12 muffin cups coated with cooking spray. Bake 20 - 22 minutes, until muffins spring back when touched lightly in center. Remove muffins from pans immediately; placing on a wire rack to cool. Makes 14-16.
