    Baked 9" pie shell
    3 egg yolks, beaten
    1 c. sugar
    1/4 tsp salt
    1 3/4 c. boiling water
    1/4 c. cider vinegar
    1/4 c. cornstarch
    1/4 c. cold water
    1 tsp lemon extract ( you could probably use fresh lemon a few tbs)

    meringue =
    3 egg whites
    1/4 tsp cream tartar
    1/4 tsp salt
    1/2 tsp vanilla
    6 Tbs sugar

    For filling:
    place egg yolks in top of double boiler (have water boiling underneath), add sugar and salt. gradually add boiling water
    stirring constantly. Add vinegar and the cornstarch dissolved in the 1/4 c. cold water. cook , stirring, until thick and smooth, about 12 minutes.
    Remove from heat. Add lemon extract. Stir until smooth and blended, scraping sides of pan. Pour filling into cooked pie shell. When lukewarm, top with meringue, spreading to edges and sealing to crust. Bake in 350 degree oven 12-15 minutes or until meringue is lightly browned.

    Meringue:
    Have egg whites at room temperature. PLace in medium bowl with cream of tartar and salt and vanilla. Beat at medium speed until frothy. Add sugar a little at a time, beating well after each addition until stiff peaks form.
