    Feenie's Apple Upside Down Cake

    This recipe comes from my Mother-in-law, "Feenie" (Manny's Mother). It is a nice change from the usual pineapple upside-down cake.

    List of Ingredients




    Melt butter (1 stick)
    add 1 cup of brown sugar, Mix. grease 2 pans. Put melted butter and sugar in bottom. On top of put 1 cuo pecans halfs and 2 or 3 small apples, cut into thin slices. Put dough on top of this, and bake in oven for 35 to 45 mintues at 375 degrees.

    Cake douugh: Melt 1 stick butter, add 1 cup sugar.
    Add 2 eggs. Beaten
    Add 2 cups flour
    1/2 cup to 1 cup milk
    2 Talblespoons vanilla
    1/4 teaspoons baking powder
    1/4 teaspoon salt
    Mix well. At this point Feenie used to plop the pans on the floor--I guess to even out the dough--I do the same. Bake in oven for the stated time, eject, and enjoy.

    NB: Feenie used margarine--I use butter. For ease, I use an ejector cake pan. Makes the damn thing comes out so-o-o--o much easier. Don't let it cool too long. Enjoy it right away with a cup of coffee. Sometimes I divide the dough in half, and put some of the pecan-apple mixture in between. Thus, the order would be: 1/2 butter, sugar, pecan-apple mixture in between. On top of this 1/2 of dough. The rest of the butter, sugar,pecans & apples. Last would be the rest of the dough. When it comes out, of course the pecans, brown sugar & apples will be on top.
