    MY Famous BBQ

    Source of Recipe

    Aunt Grace

    Recipe Introduction

Here is the famous BBQ I am famous for? It came from Aunt Grace. She had it one Christmas Eve. Loved it and been making it ever since. By the way..She never fixed it again..I make it for Xmas Eve..My daughter told me .. you do not have your BBQ recipe on your web site. So here it is.

    List of Ingredients

Take a 3 to 4 lb. chuck roast. No other kind of meat. The chuck roast will sredd other cuts will not.I like the chuck roast with the bone. Later I just take the bones out and throw them away. It seems to add something to the flavor. Like soup bones to the soup.
    full celery bunch
    Cut 2 large onions ---chopped
    Salt and pepper.to taste...
1 or 2 large cans of tomatoes.once in a while I put stew tomatoes instead if I do not have regular whole tomatoes. Now I usually cut them up. so buy the diced so you need not go thru all that work.
    3 Tablespoons of Sugar
1 can of tomato paste size of soup can.

    Recipe

Take a 3 to 4 lb. chuck roast. Cut it up.
I usually take a fully celery bunch and cut that up and throw that on top of the baking pan.
    Cut 2 large onions ---chopped
Salt and pepper.... Oh yes...1 or 2 large cans of tomatoes. Now I usually cut them up. so buy the diced so you need not go thru all that work.
Put water in the baking pan till it reaches the top of the roast. If you like throw in carrots. (Aunt Grace had carrots in hers- she later when I told her few years back about me making her BBQ Beef, said the carrots most likely were there for a filler or to make it go further.)
Bake it about 4 hours.. Yes, 4 hours ... at 350 degrees If you bake it make sure the lid is on.
I now just put all this in a slow cooker on low and cook it for 8 hours or over night. If you are cooking it over night ad part of the day. Make sure it is on LOW. otherwis put it on high for 8 to 10 hours.
Let it cool. But I dipped the meat into a large pot and let it sit there. While I dipped all the liquid into my large pot. I open a can of tomato paste the size of the soup can.
I put that into the liquid. I stir and cook the liquid. I put in it now about 3 Tablespoons of sugar. I mean while been stirring the meat in its pot. Trying to cool it off and break it down. If cool enough to handle take it in your clean hands and tear it apart. As you do this add to the liquid which does have the celery and onions. (I just call it the liquid) Cook this all until it gets nice and thick and cooks until you like it. Of course the Cold slaw. MY mother is the one that turn us into cold slaw on the BBQ. Going to the dime store in Cincinnati and buying us BBQ with Root Beer drink. She tell them to put the cold slaw on it, even when I would say no. She tell me, You will like it this way! ... So here Robert Paul and me and Frankie likes Cold slaw on BBQ... I think this is all of it. Of course add potato Chips..Enjoy. Of course print it out...Love and hugs, MOM
