    1 tbsp. oil
    2 lb. lean eye of round roast, cut into 2" cubes
    2 cups sliced onions
    4 cloves garlic, chopped
    1 green bell pepper, sliced
    4 ribs (large) celery, cut into 2" pieces
    8 medium carrots
    4 large baking potatoes (2 lb.) cut into eighths
    1 can (28 oz.) whole tomatoes
    1 can (15 oz.) tomato sauce
    1 tbsp. each soy sauce, dried basil
    1 tsp. Worcestershire® sauce
    1 cup fat-free beef stock, double-strength
    to taste salt, pepper




    Recipe




    Heat oven to 350º F. Heat oil in skillet. On medium-high heat, sear meat cubes in skillet until browned on all sides. In a separate bowl, combine canned tomatoes, tomato sauce, soy sauce, Worcestershire, beef stock, basil, salt and pepper. Mix thoroughly. Pour mixture over meat and vegetables in roasting pan. Cover and bake for 45 minutes at 350º F. Reduce heat to 250º F. and bake 2 hours or until meat is very fork-tender. Baste occasionally.
    Makes 8 servings.
    Cooking Tip: This recipe could be cooked in a crockpot on Low heat for 8 hours. Put it on before leaving for work and you'll have it ready to eat when you get home.
