    Old-Fashioned Vegetable Beef Soup

    List of Ingredients




    3 to 4 lbs beef shanks Also you can use chuck roast
    2 tablespoons bacon drippings -- or other fat
    2 quarts cold water
    1 teaspoon salt
    1 small onion -- chopped
    1 can (15 oz) tomatoes, diced
    6 sprigs parsley
    5 carrots -- sliced
    2 cups fresh green beans, cut
    1 cup diced potatoes
    1/2 cup chopped celery
    1/4 cup rice or barley Brown meat in drippings.

    Recipe



    Pour off excess fat.
    Cover with water; bring to the boil.
    Add salt and onion; simmer 2 hours.
    Add vegetables and rice.
    Simmer for about 1 hour longer. Remove meat from bone; add back to soup.
    Serves 8 to 10.
