    Lisa's Stuff Artichoke

    Source of Recipe

    Lisa M. Hibner

    Recipe Introduction

You realize that I made them different ways with different ingregredients.

    List of Ingredients

    1 lb. Bacon
1 chopped couple of toes of garlic
    Italian Bread Crumbs
    Parmesan and romano cheese
    lemon juice
    olive oil
    Artichokes

    Recipe

I fry and finely chop 1 lb. of bacon. 1 chop couple of toes of garlic. I mix in the bowll the bacon, garlic, Italian Bread Crumbs and parmesan and romano cheese, lemon juice and olive oil. I can not tell you exact ingredients because I don't think I measure. The mixture needs to be crumbly moist. I prepared the artichokes by clipping top of the leaves and pounding it on the counter to open it up a bit. I stuff each leaf with mixture starting at the bottom. I steam them on stove in a pot with 1 to 2 inches of water, lid on. ( I recently found some artichoke steamer contraptions but have not used them as yet) I think they may be nice. One inportant thing when steaming is to add lemon juice and olive oil to the water and drizzle on top of each artichoke. Steaming takes about 30 to 45 minutes, so keep adding water as needed.
For ham, stuff artichoke, same as above, replac ebacon with ham.
For shrimp stuffed artichoke, same as abobe, replace with chopped shrimp. If doing shrimp, I fry down little onion and add to mixture.
