    One of my most loved dishes.

    List of Ingredients




    2 small yellow Squash, cut down the middle length wise. Then cut down the length again. so it is quarted. Cut then into bit size pieces.
    1 potatoe cut into bit size pieces
    1 medium onion, cut finely
    2 eggs,beaten, if you like add another one.
    2-3 tablespoons parnesan cheese
    2 Tablespoons Oil

    Recipe



    First you get a pot, about a medium one.
    Put a bit of oil in the bottom.
    Put the chopped up onions in it and cook them untl they are done, but not brown.
    Add potatoes if you desired. then the cut up squash.
    Add water till it just covers the squash and potatoes.
    Cook on medium heat until tender.
    Take the eggs in a small bowl and beat them. Add one or two tablespoons of parmesan cheese to it the eggs. and beat again lightly.
    Then take the egg mixture and add it slowly to the squash in the pot. Stir as you do this.
    When all the egg is cooked. Serve it in a bowl.
