    Veggie Linguine

    Recipe Introduction

    This has become one of our all time favorite meals. Excellent with garlic toast or biscuits.

    List of Ingredients


    8 oz pasta of choice, al dente

    Combine
    2 cups low fat cottage cheese
    1/4 cup grated parmesan cheese
    1 tablespoon dried parsley
    4 cups bite size vegetables, steamed
    carrots, broccoli, onions, mushrooms,
    cauliflower, zucchini, etc
    1/4 cup shredded cheddar cheese


    Recipe



    Combine cottage cheese, parmesan cheese and parsley.
    Divide pasta on plates and spread the cottage cheese mixture over pasta.
    Top with vegetables and sprinkle cheddar cheese over the top.

    Serves 4
