    1 lb. bulk Greek sausage, casings removed (or other piquant sausage)
    1 pkg. 48 wonton wrappers
    3 T. olive oil, plus more to coat wontons
    1 1/2 C. crumbled feta cheese
    2 green onions, finely minced
    1/2 red bell pepper, finely minced
    1/2 C. sliced black olives
    3 T. white wine vinegar
    1 tsp. dried oregano
    1/2 tsp. garlic powder
    freshly ground black pepper, to taste

    Preheat oven to 350 ? F.
    In medium skillet over medium heat, cook sausage, breaking up meat, 7 minutes or until no longer pink; drain. Meanwhile, press a wonton wrapper into each cup of two 12-cup muffin tins, lightly sprayed with cooking spray. Lightly brush wrappers with olive oil. Bake 5-7 minutes or until golden brown. Remove wonton cups from muffin tins and place on
    baking sheets. Set aside. Repeat process with the 24 remaining wonton wrappers. Keep oven on when done. In a large bowl, combine cooked sausage, feta, green onions, red pepper and olives. Mix well. In a small bowl, whisk together olive oil, vinegar, oregano, garlic powder and pepper. Pour mixture over sausage mixture; mix well. Spoon about 1 T. sausage mixture into each wonton cup. Bake 5-6 minutes or until heated
    through.
