    Boneless Leg of Lamb w/ Greek Sauce

    List of Ingredients


    • 2 Cup Water
    • 2 1/2 Cup instant rice
    • 1 tbl. oil
    • 4 Thin Cut Boneless leg of lamb steaks
    • Salt & Pepper
    • 1 Seedless Cucumber, halved, sliced into half moons
    • 1 Cup plain yogurt
    • 1/2 Cup chopped fresh mint


    Instructions


    1. Heat grill pan until very hot.
    2. Boil water in pot over high heat, season with salt. Add rice, stir, cover and turn off heat. Let stand five minutes.
    3. Coat lamb with Oil and season liverally. Grill for about 2 minutes per side. Remove and rest.
    4. Combine cucumber, yogurt and mint. Season with salt and pepper.
    5. Fluff rice and plate. Top with sauce then lamb.
