Chilled Cucumber Soup with Smoked Salmon

List of Ingredients
- 2 1/2 large Cucumbers
- 1 large shallot, finely chopped
- 6 tbl. chopped dill
- 1/2 cup plus 1 tbl water
- Salt & ground pepper
- 1/2 creme fraiche
- 4 oz thinly smoked salmon
Instructions
- Leaving 1 cucumber unpeeled, peel the other 1 & 1/2 and cut into chuinks, refidgerate.
- Combine cold cucumbers, half of the shallot , and 3 tbl. chopped dill in a food processor. Process until smooth with some chunks of cucumber left. Add 1/2 cup water and process to blend. Season with salt and pepper.
- In small bowl combine remaning shallot, 1 tbl. water and 3 tbl. creme frachie. Season with salt and pepper.
- Ladle soup into bowls and top each with a swirl of creme frachie. Arrange a few slices of smoked salmon on each bowl.
