Honey Glazed Salmon

List of Ingredients
- 4 thin skinless salmon fillets
- Salt & Pepper
- 1 tsp. ground cinnamon
- 3 tbl. corn oil
- 1/2 cup honey
- 4 carrots peled nad thinly sliced
- 5 cups chicory or curly endive thinly sliced
- 2 tbl. white vinegar
Instructions
- Preheat broiler. Season the salmon with salt and pepper and place on the broiling pan.
- In a small bowl, mix the cinnamon and honey. Lightly coat the salmon with this mixture, reserve hte rest. Broil salmon for 5 minutes, or until slightly charred. Keep warm.
- Meanwhile, heat oil in large saute pan until hot but not smoking. Add carrots and cook 2 minutes, stirring frequently. Add chicory and season with salt and pepper. Cook until wilted nad tender.
- Add vinegar and reserved honey mixture to the pan and toss to coat the carrots and chicory.
- Arrange a bed or carrot and chicory mixture on plate and top with salmon.
