    Mahi-Mahi with Orange Marmalade Glaze

    List of Ingredients


    • 1/2 cup orange marmalade
    • 3 tlb. sherry vinegar
    • 4 thinly sliced Mahi-Mahi fillets
    • Salt & Pepper
    • 3 tbl. olive oil
    • 1 teas. tarragon
    • 4 medium endivem sliced


    Instructions


    1. Preheat broiler. MIx together marmalade and 2 tbl. of the vinegar. Season the mahi-mahi with salt and pepper and arrange in the broiler rack. Coat liberaly with the marmalade glaze.
    2. Broil for 5 minutes, or until glaze begins to char.
    3. Meanwhile, mix together remaining vinegar, oil and terragon in a medium bowl. Add endive nad toss to coat. Season with salt and pepper.
    4. Make a bed of endive and place fish on top of endive to serve.
