Mahi-Mahi with Orange Marmalade Glaze

- 1/2 cup orange marmalade
- 3 tlb. sherry vinegar
- 4 thinly sliced Mahi-Mahi fillets
- Salt & Pepper
- 3 tbl. olive oil
- 1 teas. tarragon
- 4 medium endivem sliced
Instructions
- Preheat broiler. MIx together marmalade and 2 tbl. of the vinegar. Season the mahi-mahi with salt and pepper and arrange in the broiler rack. Coat liberaly with the marmalade glaze.
- Broil for 5 minutes, or until glaze begins to char.
- Meanwhile, mix together remaining vinegar, oil and terragon in a medium bowl. Add endive nad toss to coat. Season with salt and pepper.
- Make a bed of endive and place fish on top of endive to serve.
