Smoked Salmon & Swiss Cheese Panini

List of Ingredients
- 1/2 cup Piccalilli relish
- 8 slices pumpernickle bread
- 8 oz swiss cheese
- 10 to 12 oz thinly sliced smoked salmon
Instructions
- Preheat panini press, or heat large nonstick frying pan over med. heat for several minutes.
- Spread 1 ybl. of piccalilli evenly on each slice of bread. Layer Swiss cheese and salmon on 4 og the slices, top with remaning bread.
- PLace sandwiches in the panini press or frying pan. If using frying pan, weight the sandwiches by placing cake pan over them and placing a can for weight inside cake pan. Turn sandwiches part way through cooking and replace cake pan and weight. Cook for 4 minutes or until the bread is crispy and the cheese is melted.
