    Smoked Salmon & Swiss Cheese Panini

    List of Ingredients


    • 1/2 cup Piccalilli relish
    • 8 slices pumpernickle bread
    • 8 oz swiss cheese
    • 10 to 12 oz thinly sliced smoked salmon


    Instructions


    1. Preheat panini press, or heat large nonstick frying pan over med. heat for several minutes.
    2. Spread 1 ybl. of piccalilli evenly on each slice of bread. Layer Swiss cheese and salmon on 4 og the slices, top with remaning bread.
    3. PLace sandwiches in the panini press or frying pan. If using frying pan, weight the sandwiches by placing cake pan over them and placing a can for weight inside cake pan. Turn sandwiches part way through cooking and replace cake pan and weight. Cook for 4 minutes or until the bread is crispy and the cheese is melted.
