White Bean & Mushroom Chili

List of Ingredients
- 1/3 cup extra virgin olive oil
- 1 small onion, diced
- 6 cups sliced portabello mushroom
- Salt & Pepper
- 1 (15 oz) can cannellini beans, drained
- 3 cups prepared marinara sauce
- 1 tbl. chili powder
Instructions
- In a large saute pan, heat the olive oil until hot but not smoking. Add the onion and cook for 1 minute, or until it starts to soften. Add the mushrooms and cook for another 2 minutes. Season with salt and pepper.
- Add the beans, sauce and chili powder and bring to a simmer. Taste to check the seasonings, serve hot.
