    Apple Barn Stack Cake

    Source of Recipe

    Dogwood Arts Cookbook

    List of Ingredients

    2 cups sugar
    1 cup butter
    2 large eggs
    6 cups sifted plain flour
    1 tsp soda
    3 tsp baking powder
    1 tsp salt
    1 T vanilla
    ½ cup buttermilk

    Recipe

Cream butter and sugar, add eggs. Sift flour, soda, baking powder and salt. Then add to batter, alternating with buttermilk and vanilla. Divide dough into eight parts, wrapping in foil or plastic wrap. Chill dough. Heat oven to 400°. Place one ball of dough in a 9" greased cake pan. Bake for 10 minutes or until light brown. Continue to bake all eight layers. While layers are warm, stack 8 layers high using apple sauce/apple butter mixture.

A 48 oz. jar of apple sauce mixed with 12 to 16 ounces of apple butter plus a cup of sugar and 1½ tsp cinnamon works well. Be sure to use plenty of applesauce mix. Cake layers will seem hard but will soften as applesauce soaks in.
Use Smucker's or Musselmann's applesauce for best results.
