    Spicy Black-eyed Peas

    We have this every year on New Year's Day. We do not care for "just" black-eyed peas.

    List of Ingredients




    ½ pound bacon
    2 cups chopped onion
    2 cups chopped green pepper
    2 cups chopped celery
    1 can stewed tomatoes
    3 (15 oz) cans black-eyed peas
    1 can Ro-Tel tomatoes
    salt to taste

    Recipe



    Cook bacon until it has rendered the fat. Transfer bacon to a 6 to 8 quart soup pot. Saute the onion, green pepper and celery in the bacon fat. Pour peas into the soup pot. Add the sauteed vegetables, stewed tomatoes, Ro-Tel tomatoes, salt and pepper. Cook over medium to medium low heat for 30 minutes.
    You can simmer in a slow cooker for several hours, if you desire.
