    1 x 8-rib Venison Rack
    Red chili paste to taste
    4 teaspoons olive oil
    2 teaspoons soy sauce
    1 teaspoon freshly chopped ginger
    2 teaspoons freshly chopped mint
    1 teaspoon freshly chopped garlic


    Recipe



    Trim rib loin taking care to remove all of the silver skin. Cut in between each rib to produce eight pieces.

    Prepare marinade by mixing all the ingredients well and placing them in a flat dish. The marinade is designed to impart a complimentary flavor into the surface of the meat, not to tenderize it. It is also important to turn the meat at least four times to ensure even penetration of the flavors.

    Barbecue, pan-fry or grill the meat, but remember to cook it rare and to rest prior to service. Because the meat will have a hot spicy flavor, a fruity rice salad or a creamy pasta is a suitable accompaniment.
