    Related to both onions and garlic, leeks look like giant scallions and add rich flavor to sauces. In this pasta dish, leeks combine with the tartness of lemon juice, the saltiness of feta cheese and the nutty richness of toasted walnuts to make a delectable sauce you'll want to make again and again.

    List of Ingredients




    4 tablespoons olive oil
    6 leeks cleaned, sliced lengthwise
    1 tablespoon fresh thyme chopped
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    1 cup vegetable consomme
    3 tablespoons lemon juice
    4 ounces feta cheese crumbled
    1 pound BUITONI Refrigerated Fettuccine
    1/2 cup walnuts toasted

    Recipe



    Heat oil and slowly cook leeks in a large skillet until soft; season with thyme, salt and pepper; add consommé and lemon juice. Cook, stirring for 1 minute. Stir in cheese; remove from heat.

    Meanwhile, cook fettuccine according to the package directions; drain. Toss fettuccine with feta mixture; sprinkle with toasted walnuts.

    TIP: Make sure to wash leeks well before cooking them, as they tend to collect dirt between their tightly packed layers. Cutting them lengthwise makes cleaning easier.
