Chicken, Leek and Garbanzo Bean Stew

1/4 cup olive oil
1 1/2 cups boneless skinless chicken breasts cut into 2-inch pieces
2 leeks trimmed and cut into thin slices
1 1/2 cups chicken broth
1 cup garbanzo beans canned
3/4 teaspoon salt
1 teaspoon red wine vinegar
Recipe
Heat olive oil in a heavy skillet over medium-high heat. Add the chicken and leeks; cook, stirring occasionally, until the chicken turns golden brown, 8 to 10 minutes. Add chicken broth, cover and cook until the chicken is tender, 30 to 35 minutes. Transfer the chicken to a bowl with a slotted spoon; set aside.
Decrease the heat to low and add garbanzo beans. Simmer, uncovered, and reduce by one-third, 15 to 20 minutes. Season with salt and vinegar. Return the chicken to the pan and heat thoroughly. Serve immediately.
