    Upside Down Pina Colada Cake

    1 8 oz can pineapple tidbits
    1 Tbsp.butter,melted
    1/3 c.toasted coconut
    1/3 c.cream of coconut
    2 Tbsp.rum
    1/3 c.butter,softened
    3/4 c.sugar
    1 egg
    1 1/2 tsp vanilla
    1 1/2 c. all purpose flour
    2 1/2 tsp baking powder
    1/4 tsp salt

    Recipe



    1)Drain pineapple,reserving juices.Add enough water to reserved pineapple juice to equal 2/3 cup.Place melted butter in a 9x1 1/2 inch round baking pan;tip pan to evenly coat.In a small mixing bowl combine drained pineapple,toasted coconut,cream of coconut, and rum;spread evenly in prepared pan.Set aside.
    2)In a medium mixing bowl beat 1/3 cup butter and sugar until combined.Add egg and vanilla;beat until fluffy.Stir together flour,baking powder,and salt;add to beaten mixture alternately with the 2/3 cup pineapple liquid.Carefully spoon batter atop mixture in baking pan.
    3)Bake in a 350 degree oven about 40 minutes or until a toothpick inserted near center comes out clean.Cool in pan on a wire rack 5 minutes.Loosen sides;invert cake onto serving plate.
    Serve warm.
