    2/3 cup popcorn kernels
    3 tbsps. vegetable oil
    1 cup butter
    1 cup peanuts, dry-roasted unsalted,
    optional
    2 cups brown sugar
    1/2 cup corn syrup, light
    1 tsp. vanilla
    1/2 tsp. salt
    1/2 tsp. baking soda

    Recipe



    Pop popcorn in oil. Remove any un-popped kernels. Add peanuts, if desired. Set aside.

    Melt butter in saucepan. Add brown sugar and corn syrup. Bring to boil, stirring constantly. Reduce heat and boil for 5 minutes. Remove from heat. Add vanilla, salt, and baking soda to saucepan and stir well.

    Pour over popped corn. Spread coated popcorn into (2) 11” X 9” X 2” baking pans. Bake in a 250 oven for 1 hour, stirring every 15 minutes. Cool for 1 hour, then break up before storing.
